In Dominican culture, the Dominican torta is a popular recipe that combines the sweetness of cornmeal cake with a delightful blend of spices and your preferred type of milk. 

 

While the direct origins of this torta recipe may be shrouded in mystery, its status as a beloved cultural staple in the Dominican Republic has endured for generations. 

 

By blending the tropical essence of coconut with the rich flavors of Mexican Agave, I introduce a unique and imaginative twist. Coco, a fruit with roots in Africa and India, pairs harmoniously with Agave, a plant deeply intertwined with Mexican heritage. As per certain sources, the origins of Coco can be traced back to these two continents. Meanwhile, Agave thrives in the vibrant lands of Mexico, North America, and the Caribbean, further enhancing its cultural significance.

 

 Mezcal and Tequila, both made from Agave, have gained global popularity. In addition to these spirits, Agave is now widely used to produce sweet Agave syrup (Jarabe) for juice sweeteners and baking purposes.

 

The goal of this recipe is to represent the Power of Our Roots as a collective inspiration. Combining the ingredients of Africa, the Dominican Republic, Mexico, and India. These efforts are inspiring to search the deep roots of our gastronomy to create your own modern mouthwatering flavors.

Coco Agave Dominican Torta Recipe

1 pound of Goya Fine Cornmeal

Two pieces of cinnamon sticks

½ cup of cloves

4 cups of Almond Milk

1 cup of Agave syrup (this depends on your level of preferred sweetness)

1 can of Carnation evaporated milk

1 cup of dried cranberry (optional)

1 Cup of shredded unsweetened coconut

1 cup of your preferred mixed nuts (Almonds, cashews, pumpkin seeds, etc…)

1 can of coconut milk

½ bar of butter



Cooking Directions:

 

  1. In a separate bowl, combine the entire bag of cornmeal with the rich and indulgent coconut milk for a smooth and creamy texture. Make sure to thoroughly mix the two ingredients to achieve a seamless consistency. Remember to sift the cornmeal before adding it to the mixture. After that, incorporate the 4 cups of almond milk into the blend. 
  2. Next, add the agave syrup, mixed nuts, cranberries, and shredded coconut to the mixture. Meanwhile, on the stove, simmer 2 cups of water with cloves and cinnamon. After allowing it to simmer for 10 minutes, use this flavorful liquid to enhance the cornmeal mixture. Transfer the mixture to a cooking pot of your choice and cook it over medium heat, stirring continuously. 
  3. While the cornmeal mixture is cooking, add 1 can of carnation milk to the pot until the mixture thickens and reaches a strong consistency. Keep stirring the pot to prevent any lumps from forming. Once you achieve the desired consistency and find it difficult to stir, turn off the heat and place the pot on a heat-resistant surface. 
  4. Prepare a baking pan by coating it with butter, then spoon the mixture. Bake it for approximately 30-45 minutes until the Coco Agave torta is fully cooked. Keep in mind that the torta will have a soft texture when taken out of the oven. For the best results, allow it to cool and set for a couple of hours preferably overnight.
